Carla Hall's Gingerbread

This is the best recipe I have found for Gingerbread. It is super easy and you can make cookies or Gingerbread houses out of it.

1 cup brown sugar
2 eggs
1 teaspoon ginger
1 teaspoon salt
6 cups flour
1 cup butter
1 1/4 cups molasses
1 tablespoon cinnamon
1/2 teaspoon cloves
1 teaspoon baking soda

Cream butter and sugar, add molasses and eggs (slightly beaten). In a separate bowl mix all the dry ingredients. Add to wet ingredients a little at a time, mix well. Refrigerate for 2 hours.

Roll out to make houses or roll into balls and roll into sugar for cookies.

350 degrees and I bake for 8 minutes and then pull them out of the oven and let sit for 1 minute on cookie sheet before transferring cookies to cooling rack.

Enjoy!
